As an Italian a Caprese salad has long been a staple in my summer diet – it’s simple, refreshing, and actually low calorie. Cheese-aholic over here! If you’re looking for a different take on a Caprese salad or love cheese as much as I do, consider making a burrata Caprese salad this summer.

Umm…What’s burrata?

Burrata is a cow’s milk cheese made from Mozzarella and filled with stracciatella and cream so it has a soft creamy texture. It’s one of my favorite cheeses and is so refreshing on those hot summer days.

The great thing about Burrata is that you don’t have to wait for it to reach room temperature before you serve so this salad can take a few minutes to make – perfect for those who want a quick dinner or easy party food.

The biggest piece of advice when making your burrata Caprese salad is to start with great tomatoes. It truly makes all the difference. My preferred tomatoes are Pomodoro cuore di bue (also called Beefsteak tomatoes) or Heirloom. They have that classic tomato flavor without being too acidic.

HOW TO MAKE A BURRATA CAPRESE SALAD

Ingredients:

– Large Ripe Tomatoes

– Burrata

– Extra Virgin Olive Oil

– Balsamic Vinegar

– Salt & Pepper

– Finely Chopped Italian Flat Parsley

Steps to make a burrata Caprese salad:

  1. Carefully place the burrata in the center of the plate to not split the cheese’s delicate skin.
  2. Cut the tomato(s) in fat wedges. If serving as a starter 1 tomato is perfect for 2 people. If eating as your main 1 tomato per person is best.
  3. Place the tomato wedges around the burrata.
  4.  Lightly drizzle olive oil and balsamic vinegar on the burrata and tomato for flavoring.
  5. Add salt and pepper to taste.
  6. Finely chop Italian flat parsley and sprinkle on the salad.
  7. When ready to serve cut the burrata so the cream oozes out & you can enjoy!

Oh my! This looks delicious and so easy and perfect for a vegetarian like myself. I’ll pin this for later. It seems like it would be something easy to toss together for guests if I’m having them over (after this covid/coronavirus thing goes away). Thanks for sharing a great recipe.
