Easy Low Calorie Meal: Salmon Poke Bowl

While I consider myself fashion obsessed – I mean it’s the reason I started a fashion blog – I also enjoy cooking in my personal time. One meal that I make on repeat and my husband loves are salmon poke bowls. If you’re looking for an easy, low calorie meal to make this summer then this is the meal for you.

I started making poke bowls a few years ago, but was initially scared because I thought it would be overly complicated. I couldn’t have been more wrong! Since everything is raw (except for the rice) it takes less than 30 mins to prepare from start to finish and after a busy day of working that sounds like perfection. All it take is cooking the rice and prepping!

If you’ve never had a poke bowl consider it deconstructed sushi in a bowl. It’s common to include vegetables and fruit for that sweet and savory taste. This is just the mixture of ingredients I prefer but you can customize it to your taste preferences.

LOW CALORIE MEAL IDEA: SALMON POKE BOWL


Full ingredient list:

– Fresh salmon (minimum 1 filet)

– Avocado

– Mango

– Cilantro

– Cucumber

– Lemon

– Honey

– Toasted sesame oil

– Rice wine vinegar

– Soy sauce

– Sriracha

– White sugar

– Salt

– Olive oil

– Long grain white rice

 

How to create the poke bowl:
  1. Clean the salmon (remove skin) and cut into square chunks for easy eating
  2. Season the salmon in a bowl with soy sauce, sesame oil, sriracha, squeeze of lemon juice, a touch of honey, and fresh cilantro
  3. Put the salmon in the fridge – tastes better chilled
  4. Cook your sushi rice as you prep the rest of the ingredients (see below for sushi rice how-to)
  5. Prep your accoutrement – chop up the mango, avocado, cucumber, and cilantro to your preferred amounts
  6. Place your accoutrement in the fridge while you wait for the sushi rice to finish
  7. Once the sushi rice is done add it as your base layer and top with your salmon and veggie/fruit mixture

 

How to cook sushi rice:

* Cook sushi rice while you prep the rest of your ingredients. You can eat the sushi rice once it’s ready or allow time for it to cool. 

  1. Place 1 cup of rice and 2 cups of water in a pot or large sauce pan
  2. Allow to boil and once boiling put the lid on and turn down to simmer
  3. Cook for 17 minutes and don’t lift the top while it’s cooking
  4. In a saucepan, combine the following:

– 1/4 cup rice vinegar

– 1 tablespoon oil

– 2 tablespoons white sugar

– 1/2 teaspoon salt

5. Cook this over medium heat until the sugar dissolves and then allow time to cool. Stir into the cooked rice and keep stirring    until the rice is fully coated
